The answer is simple: Texture. Most commercial piccalillis use 'filler' vegetables that go soft in the brine. By using early-season Spring vegetables, we get a much higher water content and a thinner cell wall, which results in a far superior 'crunch'. We hand-dice the veg slightly larger for this jar specifically to preserve that fresh-from-the-garden snap.
